Department 57 is a multi-format project consisting of 3 independent venues: a restaurant, a club and a banquet hall. The space is designed so that in each of the zones guests feel comfortable regardless of events occurring outside the walls.
Here, the trend towards the active use of vegetables was supported. For many dishes, they presented products in an unusual format: for example, they made adjika from strawberries for serving with salmon tartare, fermented pineapples to beef brisket, brought buckwheat to the state of paste and offered to start in the company of stroganina from a goby. Experiment a lot with sauces and food design.
